Kory and I got Italian takeout last month and we ordered a salad very similar to this one! We both became obsessed and I immediately knew I had to make it (not sure why it took me so long to do so). Now that she’s here I’m never going back. Really I don’t think I’ll ever love a kale salad as much as this one. It’s loaded with chickpeas, tomatoes, avocado, feta, cucumber, and topped with a homemade dressing. I served it with salmon last night but I actually think this alone would have been enough!

Leveled Up Kale Salad

Ultimate kale salad! Loaded with chickpeas, tomatoes, avocado, feta, cucumber, red onion, and topped with a homemade dressing.

Ingredients

Kale Salad
  • 2.5 cups chopped kale
  • 1 tbsp. avocado oil
  • 1 cup cherry tomatoes sliced in half lengthwise
  • 1 can drained chickpeas
  • 1 avocado cubed
  • 1/4 red onion chopped fine
  • 1 cucumber sliced and then chopped into quarters
  • 1/2 cup crumbled feta cheese
Dressing
  • 1/4 cup avocado oil
  • 1 tbsp. red wine vinegar
  • 1 tbsp. honey
  • Juice of 1/2 a lemon
  • Dash of salt and pepper

Instructions

  1. Put kale in a large bowl, add avocado oil and massage. Don’t skip that!
  2. Add the rest of the veggies + feta. 
  3. Whisk together dressing and pour on top. Mix well. Enjoy!
