Last weekend I took on the task of making an apple pie! I had never made one before and I must admit I was a bit intimidated to do so. That said, I pretty much adapted my recipe from the apple pie crisps I recently made and just made it into a pie! It was certainly a labor of love and at one point I thought I had ruined it completely. I totally underestimated the amount of apples I would need, so when I went to pour the filling into the crust it was looking a little empty…. luckily Kory was around and ran to the store to grab some more real quick! I got back to work and I have to say I was so pleased with the end product. I am honestly surprised at how delicious it turned out! Yes, I was very seriously doubting myself and my baking skills, but 10/10 I would make this pie again! I think part of the reason I enjoyed it so much was because of the effort that went into making it. I certainly don’t think this way with all foods (for example making a turkey is just not fun to me nor do I enjoy it after it’s made), but this is a concept I remind my clients of quite often! Taking the time to prepare food is a form of self care, and really allows us to view it differently as we consume it. We feel nothing but gratitude and abundance! Homemade Apple Pie

Homemade Apple Pie

Making an apple pie is a labor of love, but it is so worth it when you get to dig in! It has a light, crisp crust and a gooey warm inside. I can't wait for you guys to enjoy it this holiday season.

Ingredients

Filling
  • 5 honey crisp apples sliced 
  • 2 tbsp. unsalted butter
  • 1/4 cup syrup 
  • 2 tsp. vanilla extract
  • 2 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1/4 cup coconut sugar
  • Juice of 1/2 lemon 
  • 3 tbsp. arrowroot powder
Crust
  • 1 1/2 cup whole wheat flour (+ more for rolling out)
  • 1/4 cup coconut sugar
  • 1 tsp. cinnamon
  • 1/4 tsp. salt
  • 3/4 cup greek yogurt 
  • 3/4 cup cold butter sliced
  • 1/4 cup cold water 
  • 1 egg (used at the end to brush the crust)

Instructions

  1. Place apples, butter, syrup, vanilla, cinnamon, nutmeg, and coconut sugar in a pot over medium heat. Place lid on and let simmer ~10 minutes, stirring every couple of minutes. Add juice of lemon and let simmer for 5 minutes more.
  2. Mix arrowroot powder with 2 tbsp. of warm water in a small bowl. Add the mixture to the apples and stir in. Let the mixture simmer ~8 more minutes until the sauce has thickened. Remove from heat and let cool to room temp.
  3. For the crust, place 1 cup flour, cinnamon, sugar, salt, greek yogurt, and butter in a food processor. Pulse a few times until it is blended. Add in cold water and continue to pulse a few more times until it balls together.
  4. On a clean surface sprinkle flour and place crust on the surface. Cut crust in half and place one half in the refrigerator to keep cool. Knead a generous amount of flour (~1/4 cup) into the crust and then begin to roll it out, using more flour as needed to prevent it from sticking. Roll it out and transfer to a well greased pie pan. If there is any overhang you can trim it off, but you want it to come all the way to the edge of the dish.
  5. Retrieve the other half of crust from the refrigerator and add flour, knead, and roll out the same way. Use a pizza cutter to cut into about 1/2 inch strips.
  6. Pour filling into the pie crust and spread out evenly. Take the strips and lay them out one way, turn the pie and then lay them the opposite way. If you are fancy and want to weave - go for it! I did not the patience. Make sure the edges are pressed down firmly.
  7. Whisk egg in small bowl (add an extra dash of cinnamon if you want!) and brush it lightly over the crust. Bake at 375°F for 30 minutes.
