Greek Marinade with Chicken
The perfect Greek marinade DOES exist and you can easily make it at home. Adding as much flavor to meals as I can is my jammmm, and this one isn’t lacking. I want to highlight dill weed in this recipe because I hardly use it, but I should more! It has a distinct flavor that tastes a little grassy… but like in the best way possible, and a little goes a long way.
Ingredients:
2 chicken breasts (about 1 lb. in weight)
1 tbsp. oregano
1 tsp. dill weed
1/4 cup fresh basil - chopped fine
1/2 tsp. Himalayan sea salt
1 tsp. garlic powder
1/2 tsp. onion powder
Dash of black pepper
1/4 cup avocado oil
Juice of 1/2 lemon
Instructions:
Cut the two chicken breasts in half lengthwise and place in a stasher bag (or ziploc bag). Mix all of the other ingredients in a small bowl and then pour in the bag with the chicken. Shake it up and place in the refrigerator for at least 3 hours to let the flavors marinate together. Cook the chicken in a skillet on the stove top until it is cooked all the way through. Serve with brown rice, tomatoes, cucumber, feta, tzatziki, & garlic hummus!
