These muffins are the dreamiest, fluffiest muffins ever! I made them on a whim yesterday and I was honestly ecstatic with how they turned out. They are gluten free, have a delicious peanut butter + banana flavor with a hint of vanilla AND have chocolate chips. So many of my favorite flavors combined to make such a yummy treat. I think these are perfect for mornings on the go or even better when you have time to sit and enjoy them with a cup of coffee.

Gluten Free Peanut Butter Banana Muffins

Super fluffy gluten free peanut butter banana muffins! These are perfect to make for a grab and go breakfast or to enjoy while sipping your coffee. These are an absolute must!

Ingredients

Wet Ingredients
  • 3 extra ripe bananas 
  • 2 eggs
  • 1/2 cup creamy peanut butter 
  • 1/3 cup melted and cooled coconut oil 
  • 1 tsp. vanilla
Dry Ingredients
  • 1/4 tsp. pink Himalayan sea salt 
  • 3/4 cup cassava flour 
  • 1/2 tsp. baking soda 
  • 1/3 cup + 1/4 cup dark chocolate chips 

Instructions

  1. Preheat oven to 350°F.
  2. In a large mixing bowl mash bananas. Add eggs, peanut butter, vanilla, and coconut oil and whisk together. 
  3. Add in the sea salt, cassava flour, baking soda, and 1/3 cup chocolate chips. Stir together with a spatula. 
  4. Pour batter evenly into muffin pan. Take the other 1/4 cup chocolate chips and spread out evenly on top of the muffin batter. 
  5. Place in the oven and bake for 19 minutes.
