Garlic & Basil Hummus
Anybody else been SCHNACKIN’ a lot lately?! Yeap, me too.
The thing is, I don’t usually keep a lot of snacks in the house!
Mostly because before this we weren’t really home often enough
to snack!
My how times have changed. Instead of digging through the
cabinets and snacking on those random crackers in a box from 6 months ago (I know I’m not the only one…) I’ve been trying to
keep yummy options in the refrigerator! One of my go to snacks
lately has been hummus.
The basil and lemon in this one is super
refreshing and the garlic packs a punch of flavor!
I loooove to eat it with
carrots, celery, and plantain chips! Hope y’all love it!
Ingredients -
1 tbsp. + 1 tsp. avocado oil
3 cloves of garlic
1/4 cup fresh basil
1 can chickpeas - drained but save the juice!
1/4 cup aquafaba (chickpea juice!)
Juice of 1/2 lemon
1/8 tsp. black pepper
1/4 tsp. Himalayan salt
Instructions -
In a small skillet heat 1 tsp. avocado oil over medium heat. Sauté the garlic cloves for about 10 minutes, stirring so they do not burn (don’t worry about mincing them because you will put them in the food processor anyways). When the garlic is done put it in the food processor with the basil, chickpeas (set aside one spoonful of chickpeas to add on top at the end), aquafaba, lemon juice, salt and pepper. Blend until smooth! Top with chickpeas, avocado oil drizzle, and more black pepper. Enjoy with whatever you like to dip in your hummus!
