Shrimp, asparagus, orzo, and tomatoes - if this dish doesn’t scream summer sitting on the patio, I don’t know what does! The weather has been heating up lately and I have been loving sitting outside to edit recipes, finish up work, and have meals. When Kory and I moved into a new space we decided to stick with barstools and a little coffee table since majority of the time it’s just the two of us and we’re still in an apartment (aka not a ton of space). A major perk is that our balcony is pretty big so we couldn’t wait to get a table to have dinners out there now that it’s almost summer. I mean gosh, we don’t live in Southern California so we can sit inside all the time right?!

Anyways, spending time out there has inspired so many recipes- fresh, crisp, flavorful, Farmers Market finds. This is just the first one in the lineup so stay tuned for many more! This dish is delicious reheated and makes enough so that you can have it multiple times throughout the week. Hope you guys love it as much as I do!

Creamy Shrimp & Orzo

Shrimp, asparagus, orzo, and tomatoes - if this dish doesn’t scream summer sitting on the patio, I don’t know what does! This dish is absolute delicious and tastes just as good reheated.

Ingredients

  • 3 tbsp. avocado oil 
  • 12 oz. small shrimp 
  • 1 bundle of asparagus 
  • 2 cloves minced garlic 
  • 1 cup cherry tomatoes 
  • 8 oz. orzo 
  • 1/2 cup Califia Farms Better Half 
  • 1/3 cup fresh shaved parmesan 
  • 1 tsp. arrowroot powder 
  • Salt and pepper 

Instructions

  1. Place 2 tbsp. avocado oil in a skillet over medium heat. Add shrimp and cook it for about 3 minutes on each side. I suggest cooking half the shrimp at a time so it cooks evenly. When the shrimp is done cooking place it in a large bowl and set aside.
  2. Chop the asparagus into 1/2" pieces and add them to the skillet, as well as 1 more tbsp. of avocado oil.
  3. Let the asparagus sauté for about 3 minutes and then add in the cherry tomatoes. Use a potato smasher to lightly press down the tomatoes, just enough to crack to the skin. Let sauté 3-4 more minutes. 
  4. Prepare orzo according to instructions on package. Save 1/4 cup of the water before draining it. 
  5. Add Better Half, the water from the orzo to the skillet, and the parmesan to the skillet. Stir in and bring to a low simmer for about 2 minutes. 
  6. Mix the arrowroot powder with 1 tsp. water and pour it into the skillet. Mix well and let simmer 1 more minute.
  7. Pour the sauce + veggies and orzo over the shrimp in the large bowl and mix together. Enjoy!
