Creamy Gnocchi Skillet with Mushrooms, Kale, & Italian Sausage

This dish will be perfect for cool autumn nights, and tastes just as good reheated throughout the week. You'll start by sautéing onions and mushrooms and then adding a flavorful mild Italian sausage. Once that’s cooked you’ll pour in the tomato sauce with vegetable broth and then let your potato gnocchi cook right in the liquid making it flavorful and fluffy. Finally, you’ll add some cream, parmesan cheese, and a handful of kale bringing all of the flavors of this dish together. I hope you enjoy this as much as my family did!

Creamy Gnocchi Skillet with Mushrooms, Kale, & Italian Sausage
This creamy gnocchi skillet dish is a cozy one pan dinner that the whole family will love. It has mushrooms, kale, and Italian sausage all cooked together in a marinara sauce with broth and cream. The potato gnocchi is perfectly fluffy and soaks in all the delicious flavors.
Ingredients
- 1 tbsp. olive oil
- 1/2 yellow onion, chopped
- 8 oz. baby bella mushrooms, sliced
- 1 lb. sweet Italian sausage, casing removed
- 2 cups marinara sauce
- 1 cup vegetable broth
- 1/2 tsp. oregano
- 1/2 tsp. parsley
- 16 oz. potato gnocchi
- 1/3 cup heavy cream
- 1/2 cup fresh shaved parmesan cheese (+ more for topping if you'd like!)
- 2 handfuls of chopped kale
Instructions
- Heat olive oil in a skillet over medium heat. Add onion, mushrooms, and salt and pepper to taste. Let sauté for 5 minutes, stirring occasionally.
- Push vegetables to one side of the skillet and add the Italian sausage. Use a spatula to break it apart and let cook until browned, about 8 minutes. Mix in with the vegetables.
- Add the marinara sauce, vegetable broth, oregano, and parsley. Stir together and bring to a low simmer.
- Once simmering, add the gnocchi and stir it in with the liquid. Let simmer together for 4 minutes.
- Finally, add the cream, parmesan cheese, and kale to the skillet. Stir together, turn heat to low, and let cook about 3 more minutes.
- Remove from heat and top with more parmesan cheese. Enjoy!
