Creamy Avocado Ranch Dressing
Summer is almost here and it is time for crisp, cool salads! I love mine absolutely loaded with alllll the toppings. I need a salad to be satisfying, not just wimpy lettuce ya know?! I have been loving these mild spring temperatures. Cooking with the doors open on a warm afternoon is just the best. I am dreading the hotter temps and mosquitos, but soaking this in while I can.
I have been purchasing an avocado ranch dressing from the grocery store that I have been loving. In typical me fashion, I knew I needed to remake it at home. It didn’t disappoint! This creamy dressing is made with a few simple ingredients: avocado, buttermilk, greek yogurt, white wine vinegar, dried dill and parsley, lime juice, and garlic. I served it with a delicious salad full of kale, romaine lettuce, cherry tomatoes, avocado (yes, double the avo - why not?!), fire roasted corn, cotija cheese, and grilled cajun shrimp. Just the best! Enough of my rambling, let’s get to the dressing!
Creamy Avocado Ranch Dressing
Ingredients
- 1/2 avocado
- 1/2 cup greek yogurt
- 3 tbsp. buttermilk
- 1 tsp. white wine vinegar
- 3 tbsp. cold water
- juice of 1/2 lime
- 1 clove garlic
- 1/4 stp. dried dill weed
- 1/4 tsp. dried parsley
- pinch of salt
Instructions
- Place all ingredients in a food processor and blend until smooth.
