Chocolate Chip Mummy Bars

Can you believe Halloween is this weekend?! Me either. I think how fast this year is flying is even scarier than ghosts and goblins.👻🧟‍♂️ Any who, in true Halloween fashion of course I had to make some treats! These chocolate chip mummy bars are gluten free and the have a combo of white & dark chocolate, which I love!!! What’s your favorite Halloween treat?!

Ingredients -

1/3 cup ghee

1/3 cup coconut sugar

2 eggs

1 tbsp. maple syrup

1 tsp. vanilla extract

1/2 cup cassave flour

1/4 tsp. pink Himalayan salt

1/2 tsp. baking soda

3/4 cup dark chocolate chips

1/4 cup white chocolate chips

1 tsp. coconut oil

1 package sugar eyeballs

Instructions -

Preheat oven to 350°F. In a large bowl use a hand mixer to mix together ghee and coconut sugar. Mix ~1 min so it has some fluff to it. Add in eggs, syrup, & vanilla and continue to mix. Finally add the flour, salt, and baking soda - use a spatula to stir in these ingredients. Stir in 1/2 cup of the dark chocolate chips. Spread the batter into a parchment lined 8x8 baking pan. Sprinkle the other 1/4 cup dark chocolate on top. Bake for 19 minutes. Let cool and then remove from pan, placing on a cutting board. In a small sauce pan melt the white chocolate and coconut oil over low heat, stirring so that it does not stick or burn. Drizzle in thin lines over the cookie. Cut into squares, add eyeballs (place them on melted white chocolate so they stay in place - or add a little dot of melted chocolate to the back of the eyeball using it like glue). Enjoy!
