Chocolate Chip Chunk Cookies
CHOCOLATE CHIP CHUNK COOKIES!!!
Why just have chocolate chips when you can add chocolate chunks on top too? It took me 3 tries to get these cookies juuuust right, and it was worth the wait. This is a gluten free version of my grandmas original recipe so you know it’s good.
Ingredients:
8 tbsp (1/2 stick) unsalted butter (room temp!)
1/4 tsp salt
1/2 tsp. vanilla
1/2 cup coconut sugar
1 egg
1/2 cup cassava flour
1/4 cup coconut flour
1/2 tsp baking soda + 1/2 tsp warm water
1/3 cup Lily's Sweets dark chocolate chips

Instructions:
Combine butter, salt, vanilla, and sugar in a bowl with a hand mixer. Add in egg and continue to mix. Mix the baking soda and warm water together, pour in bowl and add both flours as well - mix well with a spatula. Fold in chocolate chips. Scoop about 3/4 tbsp full on to a parchment lined baking sheet. Chop chocolate bar and add chunks on top of each cookie. Bake at 365°F for 9 minutes.
