Chickpea Crusted Chicken Nuggets
First person I sent this recipe to was my sister! I joke that my nephew eats chicken nuggets so much he’s going to turn into one. Swear these baked chicken nuggets taste even better than picking them up in a drive thru. Serve them in a salad, with a side of veggies, or just dip them right in some spicy mayo and enjoy!
Ingredients:
1 lb. chicken strips
Two eggs
1 cup chickpea crumbles
2 tsp. chili powder
3 tsp. garlic powder
2 tsp. onion powder
1 tsp. paprika
Salt and pepper to taste
Dressing: 1/4 cup chosen foods avocado mayo
3 1/2 tsp sriracha
Method:
Preheat oven to 375°F. In a small bowl whisk the eggs. In a separate bowl mix all of the dry ingredients. Cube the chicken. Dip piece by piece in the egg wash and then in the crumb mix, repeat. Place on a parchment lined baking sheet and cook for 30 minutes. For the sauce just mix the mayo and sriracha! Tag your favorite chicken nugget you want to make these with.
