Caramel Marshmallow Chocolate Chunk Cookies
The other day I was watching Gilmore Girl reruns (as we all do when the weather starts to cool off and there’s a crisp breeze in the air - hello fall!) when all of a sudden I heard Sookie say the words “caramel marshmallow chocolate chunk cookies” and I knew immediately I had to make some. You don’t understand, these were not want, they were a need. The first time I made them they didn’t quite turn out how I wanted, so it was back to the drawing board, and let me tell you the wait was worth it!
These cookies have a delicious buttery base with both brown and white sugar, and they have chocolate chunks mixed right in. After you chill the dough you’ll smush half of a marshmallow on top and then drizzle with decadent caramel sauce. Pop them in the oven to bake for a few minutes and you have a delicious treat everyone will enjoy this fall! These are so cozy, the perfect fall cookie to enjoy for holiday parties or just because!

Caramel Marshmallow Chocolate Chunk Cookies
These irresistibly soft and chewy cookies are loaded with chocolate chunks and topped with fluffy marshmallows and a decadent caramel drizzle. Each bite is rich, buttery, and creamy. The marshmallow becomes toasted when baking and it's the perfect pairing with the caramel drizzle!
Ingredients
- 1 stick (1/2 cup) room temp butter
- 2 egg yolks
- 1/4 cup brown sugar
- 1/4 cup white sugar
- 1 tsp. vanilla
- 1 cup all purpose flour
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 2 oz. semi sweet chocolate bar, chopped into chunks
- 4 marshmallows, ripped in half
- caramel sauce
Instructions
- Place butter, sugars, egg yolks, and vanilla in a large bowl and use a hand mixer to beat until all ingredients are mixed well.
- Add flour, baking soda, and salt. Use a spatula to mix well until a dough forms, and then stir chocolate chunks into the dough.
- Place the dough in the refrigerator to chill for one hour.
- Preheat the oven to 350°F.
- Use an ice cream scoop to scoop out dough and place on parchment lined baking sheet. Make sure you do not place the cookies too close together, as they do spread when they bake. (Makes 8 cookies all together).
- Top each cookie with half of a marshmallow and gently press it into the dough. Drizzle the top of each cookie with about 1/2 tsp. of caramel sauce.
- Bake for 12 minutes. Let cool completely before removing from the pan. Enjoy!
