Buffalo Chicken & Spinach Sandwich
A buffalo chicken sandwich is what you never knew you needed in your life, trust me - I didn’t know I needed it either until I saw a billboard for one. Naturally my first thought was “oh, I want to make that at home!” Lucky for me the weather is finally cooling off and this was such a cozy meal. I served it with Bonafide Provisions Tomato Basil soup and cozied up by the fire to enjoy. I hope you’ll do the same!

Buffalo Chicken and Spinach Sandwich

Ingredients
- 4 slices sourdough bread
- 1 cup shredded rotisserie chicken
- 1/4 cup fresh shaved gruyere cheese
- 2 tbsp. hot sauce of choice (I used Siete)
- Large handful of spinach
- Ghee
Instructions
- Place chicken, cheese, & hot sauce, in a bowl and mix together
- Place chicken and spinach on bread
- Heat 1 tsp. ghee over medium high heat in a cast iron skillet on the stovetop
- Spread a thin layer of ghee on the outsides of the bread
- Place in skillet and let simmer a couple of minutes on each side so the bread gets crisp and golden brown
