Apple Bundt Cake
I know pumpkin dominates fall desserts, but trust me you’ll want to put it on the back burner for this delicious apple bundt cake. This apple bundt cake is one of my grandpas favorite desserts and that’s really saying something because he is quite picky. My grandma makes it year round since he loves it so much, but it really is a cozy fall or winter baked good! I know this would technically be a “dessert” but anytime I make a baked good liked this I feel like it would be good with coffee in the morning or an afternoon get together with friends. Everyone loves a little sweet treat! I wouldn’t consider myself much of a baker at all, but following my grandmas recipe was so easy and I was super impressed with how it turned out! Apple Bundt Cake
Ingredients
- 1.5 cups sugar
- 3 eggs
- 1.5 cup canola oil
- 1/4 cup apple cider
- 2.5 cups all purpose flour
- 1 tsp. baking soda
- 1 tbsp. vanilla
- 1 tbsp. cinnamon
- 1/4 tsp. salt
- 3 cups peeled and chopped apples (I used honeycrisp)
- Optional: add in 1/2 cup chopped pecans
- 1 stick (1/2 cup) butter
- 1/2 cup sugar
- 1/4 cup apple cider
Instructions
- Preheat oven to 325°F.
- In a large bowl use a hand mixer to mix together sugar, eggs, oil, and apple cider until it's well combined.
- Add in flour, baking soda, vanilla, cinnamon, and salt. Use a spatula to mix well until everything is combined.
- Finally, fold in the chopped apples.
- Transfer batter to a well greased fluted tube cake pan. Bake for 1 hour.
- When the cake has about 10 minutes left make the glaze. To make the glaze combine all ingredients in a small sauce pan and whisk together over medium heat, bring to a slight simmer and then remove from heat (do not leave on the heat too long).
- When the cake is done use the handle of a spoon to poke holes in the bottom of the cake. Pour half of the glaze on the cake and let sit about 10 minutes to seep into the cake. Then carefully flip the cake out of the pan and add the rest of the glaze on top.
