The weather outside is blowing my mind! Yesterday it was 50 and sunny and today 34 and gloomy. It was the perfect day to cozy up at home and knock out some new recipes. I started the morning with hot yoga, stopped by the grocery store, and then came home and got to work. Since the New Year I feel like I have been struggling to catch up with sleep. I hit the ground running with my full time job right after the holidays and haven’t slowed down since. That said, meals like this have been saving me. After working all day it’s hard to get the motivation to wash and chop veggies, season them, cook them, do the dishes… you get it. Cue this one pan sheet meal that you can make at the beginning of the week and reheat.

I have made one pan sheet meals before, but this one has got to be one of my favorites. It has so much flavor! I usually just add 2-3 things but this time I really loaded it up. The veggies and sausage alone would be good, but you know I didn’t stop there. I also added 5 different spices to take this flavor up another notch! If you’re like me, this one pan sheet meal will be on repeat in your household because it’s such an easy meal prep option.

Andouille sausage - You just can’t beat the flavor of this sausage. It’s got a smoky taste and is so versatile.

Red potatoes - Potatoes some extra substance to this meal to help you stay satiated! I think red potatoes pair well with the sausage.

Broccoli, red pepper, yellow onion - All of the veggies! You can get creative with what vegetables you want to add to this dish, these ones sounded like the best pairings to me.

Oregano, basil, parsley, garlic powder, thyme - Yes, we have 5 different seasonings in this dish to bring alll of the flavor. Just because a recipe is simple doesn’t mean it has to be boring!

Andouille Sausage One Pan Sheet Meal

This one pan sheet meal is not your basic meal prep. The sausage, vegetables, and seasonings really take it up a notch. You will want to make this on repeat!

Ingredients

  • 1 lb. red potatoes
  • 2 small heads of broccoli
  • 1 red bell pepper
  • 1/2 yellow onion
  • 1 lb smoked andouille sausage
  • 1/2 tsp. dried oregano
  • 1/2 tsp. dried basil
  • 1/2 tsp. dried parsley
  • 1/2 tsp. garlic powder
  • 1/2 tsp. dried thyme
  • 1/4 tsp salt
  • dash of cracked black pepper
  • 1/2 cup olive oil

Instructions

  1. Preheat oven to 400°F.
  2. Wash and chop potatoes into 1/2" cubes. Cut broccoli into florets, and roughly chop the bell pepper and onion. Cut sausage into ~1/2" thick round pieces.
  3. Add all ingredients to a large bowl and use a spatula to mix well.
  4. Line a 13x18" baking sheet with parchment paper and pour everything on it. Spread out evenly.
  5. Bake for 15 minutes, mix everything up, and then bake for 15 more minutes.
