Shrimp Scampi with Banza Pasta

The other day I was craving some yummy shrimp scampi, and I just happened to have all of the ingredients on hand! I’ve been super into buying wild caught frozen fish (mostly salmon + shrimp) lately. Fresh seafood goes bad quickly if you don’t use it, so I would typically only buy it if I was going to use it the day of. Buying it frozen allows me more flexibility with my meals, and I feel like it has saved some money as well.

For this recipe I used ghee instead of butter. Ghee, which is a clarified butter, removes the milk solids and is high in Omega 3 fatty acids, something Americans need more of in their diets! Omega 3 fatty acids support brain function and prevent heart disease. This being said, this dish is pretty high in ghee content. I certainly wouldn’t suggest having quite this much in your diet each day, but there are plenty of other ways to get Omega 3 fatty acids in your diet as well.

I’ve posted the recipe below for this decadent dish, and I hope you enjoy it as much as I did!

Ingredients:

1 lb. wild caught shrimp

2 tbsp. Chosen Foods Avocado Oil

1 tbsp. minced garlic

3 tbsp. grass fed Ghee

¼ cup grass fed bone broth (I used turkey in this recipe, beef of chicken will also do)

¼ tsp red pepper flakes

2 tbsp. lemon juice

1 tsp. parsley

Salt + pepper to taste

For the noodles:

1 package Banza Angel Hair Pasta

Method:

Place the avocado oil and 2 tbsp. of ghee in a skillet over medium heat. Once the ghee has melted, add the minced garlic. Let simmer for about one minute. Place the shrimp in the skillet, and simmer for about 2 minutes on each side. Once the shrimp is cooked through add the rest of the ingredients; ghee, bone broth, red pepper flakes, lemon juice, parsley, salt & pepper. Let simmer for about 1 more minute and then remove from heat. Cook the pasta according to package and serve the shrimp scampi over the noodles. Enjoy!
